Chicken Adobo Recipe

I already made a write up about chicken adobo may be a year now, I just can't remember. But I did not include the recipe for that. So now I am doing it for a few friends of mine who asked me for the recipe. They, of course, had already tried my adobo and knowing how simple it is to prepare, they are eager to try it.

Here is the list of what you will need in case you want to try it yourself:
  • 3.5 lbs clean chicken thighs (boneless and skinless)
  • 1/4 cup water
  • 1/4 cup low sodium soy sauce
  • 1/4 cup red wine vinegar
  • 1 medium size yellow onion, cut in tiny rings
  • 3 bay leaves
  • 6 garlic cloves, freshly minced
  • 1 tsp black pepper
  • 1 tsp whole allspice
  • 1 thumb-size ginger, cut in tiny strips
Here is how to do it:
  • Clean the chicken, remove extra fat and put it in a non stick pan.
  • Put all the dry ingredients on top of the meat before adding the liquid ones.
  • Mix them with a wooden ladle before putting the lid.
  • Cook in medium heat until most of the liquid disappear while stirring occasionally to make sure the bottom part does not get too brown.
  • Serve over steamed rice and enjoy!
Note: Have a green salad on the side.
